HUTCHINSON, Kan. — BHappy Pho & Boba, a Vietnamese restaurant, is slated to open downtown at the beginning of April at 19 East 2nd.
The owners of the new downtown restaurant are Diem Tran and her husband Hieu Nguyen.
"Right now we just need to wait for inspection so this week, we try to get everything done," Tran said."Deep cleaning all the equipment and then contact the health department for inspection."
Tran and Nguyen recently moved to Kansas to get away from the crowded city where they own a restaurant in Denver.
"We decided to go to Kansas City," Tran said. "Somehow late at night our son got a fever and then he woke up in the middle of the night and then my husband could hardly go back to sleep and he went online searching to find a spot for our business and then Hutchinson came up as his search result."
Just like it says in the restaurant name, pho and boba will be served. Pho is a vietnamese soup dish. Customers can order boba in iced tea, milk tea, smoothies and lemonade. Boba is pearl shaped and made of tapioca. It can be ordered in multiple flavors.
Tran said she and her husband are hiring for all available positions as of Wednesday afternoon.
"So we are hiring people that work at the front line, front server, cashier," Tran said. "I've already hired a few people for the front but I'm still needing people that can work in the back."
Tran said the plan is to have BHappy Pho & Boba open Monday-Saturday from 7 a.m.-7 p.m. She said they will officially set business hours and the menu one week after opening.
