New eatery opening at Amtrak station

HUTCHINSON, Kan. — The owner of a popular local food truck is adding a permanent location in the downtown area.

Linda Chaffin with Comfort & Joy will open a small luncheon in the Amtrak station at 3rd and Main.

“I’ve had my food truck going on four years,” Chaffin said. “After the train station was opened up and was for rent, I thought that would be a neat place to work out of and have a carryout.”

Hours of the new eatery are Monday through Friday 11 a.m. until 2 p.m. Chaffin says the restaurant will have a variety of seasonal items.  

“We’ll have different sandwiches and, of course in the winter, we’ll have soups and stews and hearty meals,” Chaffin said. “I will have the ability to have a flat-top grill and a deep fryer so we can offer some different things, grilled sandwiches and things that I don’t have the ability to do on the food truck.”

Chaffin says she will continue to operate the food truck on its normal schedule and during special events as before.
